1/4 cup mango

1/2 cup red onion

1/4 cup red bell pepper

2 tbsp cilantro, chopped

1/4 tsp salt

1/4 tsp black pepper

1 tbsp Chef Eric's Blackening Spice

1 tbsp jalapeno, diced

1 tbsp sherry vinegar

1 tbsp lime juice

2 tbsp honey

Homemade Blackening Spice:

2 tbsp paprika

2 tsp onion powder

2 tbsp chile powder

2 tsp garlic powder

2 tbsp + 1 tsp brown sugar

2 tsp dry thyme

1 tbsp + 1 tsp kosher salt

2 tsp black pepper

2 tsp cumin

Pinch cinnamon


A sweet and spicy spin on salsa that is guarenteed to add a fresh taste to your fiesta. With mango, jalapeno, honey, and a homemade blackening spice, this light and flavorful appetizer can be served with almost any of your favorite dishes.


Combine all ingredients and top on your favorite fish dish. This will be the perfect addition to a blackened stealhead fillet.
