2 tbsp blue cheese crumbles

1 tsp crushed garlic

1/4 cup bread crumbs

1/4 cup chopped onion

2 tbsp fine herbs

1/2 cup Pinot Noir

1 tbsp cream or butter

1 cup organic beef stock

Salt and pepper to taste

Olive oil


This heavenly blue cheese crusted beef tenderloin is garnished with fine herbs and blue cheese crumbles that are agreeably satisfying. We suggest pairing it with our 2010 Signature Cuvee that is full of complex aromas of dark fruits and other earthy characteristics that follow by notes of sandalwood and barrel spice.
