Cherry Wood Smoked Leg of Lamb

Ingredients

1/2 cup olive oil

1 tsp pepper

1/2 cup red wine vinegar

1 tsp dried rosemary

1/2 cup dry white wine

1 tsp dried marjoram

1 tsp salt

1 tbsp minced garlic

5-6 lb leg of lamb

Cherry wood chunks or chips

Water for soaking

Description

This delectable dish is savory and smokey in all the right ways. We suggest pairing it with our 2010 Bernau Block Pinot Noir that opens with earthy aromas of smoke and mushroom that are complimented by lighter notes of boysenberry, red currant, and cinnamon. A sip of Bernau Block leads with flavors of cherry and raspberry and just a hint of spice which compliments the Cherry wood smoked leg of lamb perfectly.
