Ingredients

5 eggs

12oz heavy cream

5oz spinach

4oz wild mushroom

2oz sundried tomato

2oz parmesan

Salt and pepper to taste

Oregon Truffle Oil (optional)

Description

Mushroom quiche like you’ve never had it before. This simple and creamy dish is a delicious alternative to your average quiche recipe. We suggest pairing it with our 2010 Elton Pinot Noir.

Directions

Wilt spinach and add sundried tomato and mushroom, place in the bottom of a pie shell. Mix the eggs and heavy cream and pour over the pie shell. Bake at 350° for 45-55 minutes. Turn off oven and let cool. Top with Oregon White Truffle Oil and parmesan.
