Roasted Cornish Game Hen

Ingredients

½ cup orange juice
32 oz. cold water
1 stick rosemary leaves
8 fresh sage leaves
1 garlic clove, crushed
¼ cup kosher salt
¼ cup brown sugar
1 tsp. peppercorns
1 bay leaf
4 ½ Cornish game hens
Ground cinnamon
Cocoa powder

Directions

Bring juice, water, rosemary, sage, garlic, salt, sugar, peppercorns and bay leaf to a boil. Allow to cool completely, pour into a brine bag or pot. Place uncooked game hens into brine and refrigerate for 24 hours. Preheat oven to 425 degrees. Remove hens from brine and pat dry. Dust with cocoa and cinnamon. Place in oven for approximately 45 minutes or until internal temperature reaches 160 degrees.
