Yam Gnocchi with Sweet Pea & Tillamook Smoked Cheddar

Ingredients

2 lbs. yam, cooked and peeled 2 eggs
½ cup semolina
2 cups flour
1 tsp. smoked paprika
2 tsp. salt
1 tsp. pepper
1 cup sweet pea
1 cup shredded cheddar cheese

Directions

In mixer, blend yams, eggs, semolina, flour, paprika, salt and pepper and place into a piping bag. Over a pot of salted boiling water pipe out ¾” pieces and pinch off with finger tips into boiling water. Cook until they float to surface. Remove the floating pieces with a slotted spoon, and place them in an ice water bath to cool. To serve, heat a sauté pan over high heat and place gnocchi in pan until browned. Add peas and season with salt and pepper. Place into bowl and top with cheddar cheese.
