Blue Cheese Crusted Beef Sirloin

2 Tbsp. blue cheese crumbles
¼ cup bread crumbs
2 Tbsp. chives
Olive oil
4 - 6 oz. steaks
Salt and pepper to taste


Preheat oven to 400°. In small bowl combine blue cheese, bread crumbs, herbs, ½ tsp olive oil, and set aside. Over medium-high heat place 1 Tbsp. of olive oil into large sauté pan. Season steaks with salt and pepper and add to pan, do not overcrowd. Sear 1-2 minutes on each side or until browned. Remove from pan and place on a baking pan. Top each steak with ¼ cup of cheese mixture. Finish cooking steaks to medium rare for 4 minutes or 8 minutes for well done.
